In the heart of Saint-Paul de Vence, the hotel's restaurant has two dining rooms decorated in an authentic style. With vaulted ceilings and in dressed stone, they offer a refined atmosphere. A 17th century fountain ensures the venue's authenticity.

When the weather is fine, settle down on the terrace decorated with hibiscus and bougainvillea. The ramparts are home to this haven of peace and, at dusk, the high village walls shine with a thousand and one lights. At Le Saint Paul, enjoy delicious and contemporary dishes inspired by the seasons. Mediterranean flavours are to be savoured in the dishes prepared by the Chef Nunzio ROMANO and his team.

Fish is given pride of place, as are seasonal fruit and vegetables. Italian notes add even more colour to the a la carte and set menus and the dishes change with the seasons.

The Chef

The Chef Nunzio ROMANO is at the helm of Le Saint Paul’s kitchen. His Italian roots have influenced his cuisine, which he wishes to be sun-packed and delicious. Precision in preparation, right seasoning, and meticulous selection of produce: everything is done to ensure an extraordinary gourmet experience.

Originally from Lanciano, the Chef has worked at several prestigious establishments, such as the 5-star Grand Hotel Park in Switzerland. He also worked under the Pastry Chef Léonardo DI CARLO, Winner of the Festival of Italian cuisine in Rimini in 2004.

The Chef ROMANO draws up the a la carte and set menus according to the seasons. The dishes change throughout the year, guaranteeing freshness and exceptional quality.
